One of the few forays into the world of bottom fermentation made in Borgorose, is the result of collaboration between Leonardo and Sam Calagione of Dogfishead. Each of the two brewers put their own in this beer, take turns choosing the type of hops to add punch to punch in a dry hopping along 60 minutes, including Simcoe, Warriors and Saaz. More alcoholic, full-bodied than the classic Pils, surprising in its intensity revealing explosive but balanced. A blonde "tough" that you will love, just like the protagonist of WillaCather novel from which it takes its name.
