Produced in collaboration with Birds Fly South Ale Project, this red saison was brewed to honor to the painted hills that hold venue to the sacred Tibetan Sky Burial. With over 50% of the grist comprised of Best Red X malt, re-fermentation on Sangiovese grape must and briefly aged on hibiscus flowers, this complex concoction bleeds notes of ripe red pear, strawberry leaf, rhubarb compote and the moment you bite into a grape and realize there's still stem attached.
