Slomo is our lightest beer at 3.5% ABV. This beer provides a modest, yet flavorful beer one can enjoy at lunch and still go back to work afterwards. Slomo is what we consider a table Saison – the type of beer you can serve in a big bottle and share with friends at lunch or dinner. Slomo has no extremes; instead it is a light, easy-going and refreshing beer. Using a Saison yeast strain leads to a dry beer with a touch of spice. Given the high attenuation of a Saison and lighter malt bill, this creates a challenge when it comes to getting enough body into this light beer. To solve this riddle, we add the lightest malts possible and use a lot of other grains besides barley (i.e., wheat, oats and rye). By using these grains we create a thicker mouthfeel that helps to counteract the lack of body. Although bitterness can really stand out in a light and dry beer, we didn’t want this beer to be bitter. Therefore, we use only European hops at three different stages. In the kettle we use East Kent Goldings and Saaz hops and the post-fermentation dry hopping consists of another round of Saaz.
