Mead, considered the oldest alcoholic beverage, was well used 5,000 years ago by the Egyptians and later the Greeks and Romans.<br /><br />Remembered in mythology as the drink of the gods, it is obtained from the fermentation of honey selected in the water, then stored in oak barrels (barriques) and bottled. Drink dessert, its aroma is sweet.<br /><br />The production phases are four and more precisely: <br />- the mixing of various qualities of honeys in water (honeys are selected in function of their flavor) <br />- the guided fermentation, carried out using selected yeasts. It takes place in stainless steel tanks and lasts about 2 months (slow fermentation) <br />- rest in oak barrels for about one year for aging - that is, the development of secondary aromas due to contact with the wood - that for stabilization organoleptic characteristics- bottling<br /><br />The mead is referred to as drink dessert and the optimum temperature for its taste varies from 15 to 18 degrees, but served chilled to about 10.7 degrees. It is also an excellent aperitif.
