Brewers Notes: Golden Door is a recipe inspired by old world saison tradition comprised of water, barley, oats, spelt, wheat, European hops, yeast, and bacteria. Bottle conditioned, reserve sediment when pouring. The Take Away: Golden Door (6.7%) is a mixed fermentation saison aged in oak barrels that will be available in 750mL bottles in the Tasting Room to purchase for a limited time for onsite consumption or to-go beginning November 24th. The complexities in this beer are largely derived from the time spent aging in French oak barrels in our barrel room over the course of a year. Golden Door is an expression of our house-mixed culture of yeast and bacteria, and time. The aroma is comprised of citrus, mushroom, stone fruit skin, and hop funk. There is a creaminess to the mouthfeel that plays well off the stone fruit notes that our house culture presents, creating a peaches and cream flavor with hints of lemon, oak, cellar must, floral, and grains. The flavor of the beer is driven by its time aging in wood. Golden Door was bottled in April of 2017 and ready to drink now or may be cellared for 2-3 years at the proper temperature.
