Sub·text, noun. An underlying and often distinct theme in a piece of writing or conversation. Our brewery puts a great focus on working with farmers and maltsters in our area to create beer to sustain our community (agricultural and otherwise) as well as our thirst for well made beer. This beer is the latest extension of that theme, our first pilsner brewed with 100% northeastern grown and malted barley. There is no style that can allow a beautifully malted grain to shine quite like a pilsner. Modest hopping with Northern Brewer (a hop we originally grew on our farm but have since replaced with another variety) provides the balance and bitterness to make this beer one to keep in hand.
