This saison/farmhouse ale is brewed with local barley from Niagara malt, red wheat from NY Craft (Batavia), and local Chinook and Cascade hops from Vertical Vines also in Niagara County. The beer is made with nearly 100 % NY ingredients less the black walnuts (the squirrels got to them first!) and blended yeast strain of a Belgian and French Saison strain. This beer is straw to light yellow in color, light body with high carbonation. It has a light doughy wheat character with a touch of malt sweetness and light hay note. It boasts flavors of grapefruit, berry, touch of citrus and pine with an underlying earthiness from the black walnuts.
