The Deep Underground is the first beer designed with Matteo (Iumbe) that pushed me towards the styles that I did not like but I managed to melt, reinterpreting them and molding them according to my taste.
I wanted dry and bitter , chasing a difficult balance between hops and dark malts , no style constraints. Today I have to say that Iumbe did well.
Then came the version of " Imperial ", more alcohol, with the addition of coffee and liquorice at the end of boiling
