Last fall we took about one hundred pounds of La Crescent grape skins directly off La Garagista's winery's press, hauled it back to our cidery in Vergennes, and immediately racked ~300 gallons of cider onto them. The cider consists of two varietals - Golden Russet and Esopus Spitzenburg from Sunrise Orchards in Cornwall Vt. Both apples are high acid, medium/low tannin, with great aromatic qualities. The La Crescent skins had been macerating for several weeks by the time they were pressed off and a healthy wild yeast population immediately kicked off a robust fermentation of our apple juice. We racked off the skins after two months and the cider spent another 4 months aging in stainless before being kegged. We only made 50 kegs of this extra special cider so enjoy it!
