Born on the farms of Wallonia, saisons were originally brewed at the end of winter in order to be ready for harvest. These beers have a moderate alcohol content and are rather dry and bitter, in order to be good thirst quenchers. Their fermentation takes place at a higher than average temperature, yielding complex fruity and spicy favors, even though no spices are added. Saison Houblon undergoes massive dry hopping, i.e. the addition of hop flowers in the maturation tank. This allows the hop flavors to be extracted, but not their bitterness. American hops add powerful citrus and exotic fruit notes on a spicy background.
