Our "Innovation Series" are new beers we brew in only small pilot batches in the brewery. This beer uses Saccharomyces Trois, a "wild" strain of Saccharomyces yeast, and is known to create very unique tropical (i.e. pineapple and melon) flavors during fermentation. We hopped this beer with Azacca, Mosaic, Simcoe, and Zeus hops to create a very light yet extremely tropical and dank tasting IPA.
