The chronicle states that in 1623 the Mallersdorf monks were given the right to “sell beer under the Raiff (by the barrel)”. So in 1881 the sisters rebuilt the brewery at the current location. The chronicler writes that Superior Hundhammer and Generaloberin M. Hieronyma Eder were pursuing a double goal with the reestablishment of the brewery: Firstly, "to provide the monastery residents with a pure, nutritious drink and, on top of that, to ensure the welfare and comfort of an honorable and praiseworthy citizenry of Mallersdorf and surroundings to deserve". And these two reasons should still be valid today as they were then. Since 1933 a monastic master brewer has been in charge of the small business. The company produces 3000 hl beer and 700 hl lemonades. Since around 500 people are cared for in the monastery, the monastery needs 18% of the production itself. The head brewmaster is Sister Doris Engelhard.
